The self-crowned king of Singaporean street food smiles benignly. The essence of this country’s cuisine? I hold my breath. I am sheltering from monsoon rain under the eaves of a Chinatown hawker centre opposite a temple purported to hold two of Buddha’s teeth. I am ready for enlightenment.
